The other night, my son called me and said he was cooking dinner.

Naturally, because I am his mother, one of my first questions was:

“What are you eating?”

Ground beef and rice.

Simple enough.

He had just made the rice in his rice cooker and was getting ready to eat with his roommate—who happens to be every bit as interested in health, wellness and biohacking as I am.

So I asked him another question.

“Wait. You’re eating the rice right now?”

Silence.

“Yes. Why?”

I was genuinely surprised.

“You’re not going to cool it first?”

That was followed by the predictable:

“What are you talking about?”

And just like that, we had our next AO Scan Global biohacking conversation.

Because sometimes the most interesting wellness strategies are not complicated.

They are sitting in your kitchen.

And this one may be as simple as:

Cook it. Cool it. Reheat it.

What happens next involves something called resistant starch.

And it is fascinating.

What Is Resistant Starch?

Most starch is broken down in the small intestine into glucose that can be absorbed and used for energy.

Resistant starch behaves differently.

As the name suggests, it is more resistant to digestion in the small intestine. Some of it travels farther through the digestive tract, where it can behave more like fermentable fiber.

There are several types of resistant starch.

The type that interests us here is commonly known as type 3 resistant starch, or RS3.

RS3 can form when certain cooked starchy foods are cooled.

Rice.

Potatoes.

Pasta.

Other cooked starches.

The process behind it is called starch retrogradation.

Don’t let the term make this sound complicated.

The concept is actually pretty simple.

When starch is cooked with water and heat, its structure changes.

As that cooked starch cools, portions of the starch molecules can begin reorganizing into a more ordered structure.

That reorganized starch can become more difficult for digestive enzymes to break down.

In other words:

The rice you eat tomorrow may not behave exactly the same way as the rice you eat straight out of the cooker tonight.

Same rice.

Different preparation.

Potentially different metabolic response.

Now we have my attention.

What Does the Research Say About Cooled Rice?

This is where this little kitchen biohack becomes much more interesting.

In a randomized crossover study published in the Asia Pacific Journal of Clinical Nutrition, researchers compared freshly cooked white rice with white rice that had been:

  • cooked,
  • cooled for 24 hours at approximately 4°C / 39°F,
  • and then reheated before eating.

The freshly cooked rice contained approximately 0.64 grams of resistant starch per 100 grams.

The cooled-and-reheated rice contained approximately 1.65 grams per 100 grams.

Even more interesting, the cooled-and-reheated rice produced a lower glycemic response in the healthy adults participating in the study.

Notice something important:

They reheated the rice.

So no—you do not necessarily have to stand over your refrigerator eating cold rice for breakfast in the name of biohacking.

The resistant-starch effect was still observed after reheating.

Does That Mean Cooled Rice Is a “Free Carb”?

No.

And this is where wellness information can go sideways very quickly on social media.

Cooling rice does not turn rice into broccoli.

It does not remove all of the carbohydrate.

It does not mean everyone will have the same glucose response.

And it certainly does not mean someone with diabetes or a metabolic condition should start changing meals or medication without understanding what is happening.

Another human study looked at cooled rice in people with type 1 diabetes and found a lower rise in post-meal glucose compared with freshly prepared rice.

But there was another finding that matters just as much:

Using the usual insulin dose with the cooled rice increased the risk of post-meal hypoglycemia.

That is an important reminder that a “biohack” can become clinically significant when medications are involved.

The lesson is not:

Everyone should eat cooled rice.

The lesson is:

How food is prepared may change how that food behaves.

Then compare.

What changed?

This is where we can combine tools without confusing what any one tool actually does.

If you already use a continuous glucose monitor or a validated blood-glucose meter, you could observe your actual glucose response alongside your AO Scan energetic patterns.

Food Safety: Please Don’t Turn This Biohack Into Food Poisoning

This section matters.

Cooked rice should not sit around on the kitchen counter for hours while you wait for it to cool.

Cooked rice can be associated with Bacillus cereus, a bacterium whose spores may survive cooking and create food-safety problems when cooked rice is improperly held or cooled. FDA guidance identifies cooked rice among foods where Bacillus cereus survival and toxin formation can be a concern.

For home food safety, the FDA recommends refrigerating perishable cooked foods within two hours and using shallow containers to help leftovers cool more quickly. Keep the refrigerator at 40°F/4°C or below.

When reheating leftovers, USDA guidance recommends heating them to 165°F/74°C.

My simple rice routine:

Cook it.

Portion it into a shallow container.

Get it refrigerated promptly.

Let it chill.

Reheat it thoroughly when you’re ready to eat it.

Then enjoy your experiment.

This is not the place for the “I’ve left rice on the counter overnight my whole life and I’m fine” school of research.

We have better information than that.

Use it.

What About Potatoes and Pasta?

Rice gets a lot of attention because it has been studied specifically, but the underlying concept of retrograded resistant starch is not exclusive to rice.

Cooling cooked starches such as potatoes and pasta can also change portions of their starch structure.

But this is important:

Do not assume every starch, every cooking method and every person will produce the exact same result.

Different foods contain different proportions of amylose and amylopectin.

Varieties differ.

Cooking methods differ.

Cooling time matters.

Reheating matters.

Meal composition matters.

And human metabolism varies.

That is why I keep coming back to the same idea.

Observe your patterns instead of blindly copying someone else’s.

This Is the Kind of Biohacking I Love

Biohacking gets unnecessarily complicated sometimes.

People hear the word and imagine:

expensive chambers,

twenty-seven supplements,

wearables on every limb,

a refrigerator full of peptides,

and a morning routine that requires three hours and a personal assistant.

Sometimes biohacking is much simpler.

Sometimes it is:

Cook tonight’s rice for tomorrow.

That is it.

A tiny change.

Backed by an interesting physiological mechanism.

Supported by human research.

Easy enough for almost anyone to understand.

Then, if you’re an AO Scan user like me, you have another layer:

Scan and observe.

That is my kind of experiment.


What AO Scan Can—and Cannot—Tell You About Insulin Response

I want to circle back to this because the terminology inside AO Scan can be very compelling.

When you see familiar words associated with insulin, glucose metabolism, pancreas-related functions, nutrients or metabolic processes inside an AO Scan report, it can be tempting to interpret them exactly as you would a laboratory result.

Don’t.

An AO Scan value labeled with familiar physiological terminology is not the same thing as a laboratory measurement of that substance or function.

If you need to know:

  • fasting glucose
  • fasting insulin
  • hemoglobin A1C
  • oral glucose tolerance
  • actual post-meal glucose
  • clinical insulin resistance

there are established medical tests for those questions.

Use them when appropriate.

What AO Scan gives us is an opportunity to explore educational energetic information and repeating patterns across a very broad wellness picture.

And because the reports can be repeated, we can ask better questions over time.

That is where I believe its value becomes so fascinating.


What About Epigenetics and AO Scan?

You will sometimes hear the word epigenetics in personalized-wellness conversations.

At its simplest, epigenetics is part of the science of how environmental and behavioral influences can affect the regulation of gene activity without changing the underlying DNA sequence itself.

Food choices.

Exercise.

Sleep.

Stress.

Environment.

These are all examples of inputs that can influence physiology over time.

But AO Scan is not an epigenetic laboratory test.

It does not measure DNA methylation or directly measure gene expression.

I think the useful connection is this:

The body is dynamic.

One unusual value is not a verdict.

One scan is not your identity.

And one meal is not your destiny.

Look for patterns.

Look for repetition.

Look at related areas.

Then ask better questions.

That is a much healthier relationship with wellness technology.

Here is the entire experiment in one place.

Day 1: Fresh Rice

  1. Choose a normal meal containing freshly cooked rice.
  2. Keep the portion reasonable and record approximately how much you ate.

But resistant starch is really just the doorway.
